Recipe for shortbread:

For about 25 biscuits

  • 1 egg

  • 125 g sugar

  • 1 pinch of salt

  • 250 g flour

  • 125 g butter

Choice of flavor: cinnamon, vanilla, rum, lemon zest, etc...

In a bowl, beat the egg, sugar and salt.

Add all the flour at once and mix with fingertips. The dough takes on the appearance of sand.

Add the soft butter, then the chosen flavor, if any, and knead the dough by hand to blend it all together.

Roll the dough into a ball, wrap it in a cloth and leave it to rest for 30 minutes to 1 hour in a cool place. (optional)

Roll it down between two sheets of baking parchment to prevent it from sticking to the roller.

Approx. 4 mm thick for the punch.

Cut out the dough with a cookie cutter and place the cakes on baking paper.

Cook for about 10 minutes at 190°.

Remove the cakes as soon as the edges are russet.
