My take on THE Soup

Creamy Sausage and Spinach Tortellini Soup
1 Yellow or Sweet Onion
1tbsp basil (you can cheat and just use italian/spaghetti seasoning)
4 cloves garlic, minced (you can use 2 if you don't go hard on the g fuel)
4oz tomato paste
28oz diced petite tomatoes (we like them rotel shits)
4 cups chicken broth
1lb italian sausage
Salt and pepper to suit your own taste
1/2 cup parmesan, or 1 cup whatever
1 brick of cream cheese
3 or more cups of baby spinach
4 cups of tortellini
Optional - chopped bell pepper or zucchini

Put tomatoes, broth, parmesan, and seasonings in a crock pot (or normal w/e) and set to low.

Cut brick of cream cheese into cubes, leave on counter.

Dice onions. Saute the onions.

Mince the garlic. Reduce heat and add to the sauteeing onions. Don't burn the damn garlic.

Dump all that crap into the crock pot.

Brown the sausage. Break it as much or as little as you want. Chunks and meatballs work just as well as sausage crumble.

Add to crock pot. Cook for 2 hours on high.

Stir the pot and set to low heat. Add the cream cheese. Stir it completely. Do not stop gently stirring until you no longer see any bricks. You may see a bit of curd balls which is normal. Softening the cream cheese for 2 hours before this step prevents a great deal of curding.

Cook 1 hour on low.

Add baby spinach. Stir. Cook 30 minutes.

Add tortellini. Stir. Cook 30 minutes.

Finished. Garnish with extra parmesan and serve with bread and weed. I've yet to meet a person I served this to who didn't love it.
