To change the text, go to where it says process, click from global to Objects and right click on the text shape and edit text. You can also move the text around to make it even while editing. Have fun!

I found it. It should be on the left once you click on text shape in the tool bar and then select the one you want to change

At the top in this picture, where it says global and objects, click objects.
Then click through and find the text shape that highlights the channel name, in the picture I have it clicked and its highlighted blue (I have dark mode on) Right click on it and then hit edit text.
